WHO WE ARE

A hospitality house, not a restaurant.

We host intimate dinners for 12–16 guests, drawing a line between Italian mountain cooking and Mexican ingredients, traditions, and generosity. Every table is seasonal, deliberate, and designed to make strangers feel like regulars.

WHY THERE IS NO PASTA

A name that opens the table wider.

A name that opens the table wider.

The name does not reject pasta. It celebrates what can be overlooked: polenta, farro, barley, Fontina, Parmigiano Reggiano, blue corn, nixtamal, pepitas, flor de calabaza, hoja santa, huitlacoche, Mexican honey, and Oaxacan mezcal. These are the ingredients that carry memory, craft, and place.

MEET THE FOUNDER

Jona Gonzalez

Before we share a meal together, I want to tell you why Casa Sin Pasta exists.

I've always believed that the best conversations happen around the table. It's where strangers become friends, traditions are shared, and memories are made.

Growing up surrounded by the warmth of Mexican hospitality and inspired by the craftsmanship of Italy taught me that food has never been just about what's on the plate. It's about making people feel seen, cared for, and at home.

That's the reason I created Casa Sin Pasta.

My hope is simple: that when you leave our table, you don't just remember what you ate, you remember how you felt, who you met, and the conversations you carried home with you.

Thank you for letting me welcome you into mi Casa.

THE INSPIRATION

Two places with the same instinct for gathering.

Italy and Mexico share a reverence for family, agriculture, preservation, hospitality, craftsmanship, and communal meals. Casa Sin Pasta begins in that common ground, where a dish can carry a landscape, and a table can become a ritual.
